The iddsi guy has been set up to provide auditing and practical hands-on training for anyone that prepares and serves modified foods. ‘The iddsi guy Ltd’ is a trading name only and has no affiliation with IDDSI. The company is a training provider for dysphagia modified food and drink. So, let’s talk a little bit about me and why we have called the company the iddsi guy Ltd. In a nutshell, whenever I walk into a kitchen the team members can never remember my name, so they say ‘I remember you! You’re the iddsi guy!’ and so the name has stuck. I have been a chef for over 30 years, bringing a wealth of culinary experience to the healthcare sector (e.g. budgeting, menu planning, kitchen audits, SOP’s). Over the last 10 years I have been focused on aiding residents with dysphagia to dine with dignity by modifying the texture of the meals served in care homes and showing simple yet effective methods on how to present meals and drinks in a person-centred way. My contributions towards training chefs and care team members have been recognised with the prestigious Training and Apprenticeship Award in the 2024 Public Sector Catering Awards, a testament to the impact on catering and care team members across the healthcare. Also, I am a valued member of the National Association of Care Catering and the UK IDDSI Reference Group, promoting awareness and the ongoing use of the IDDSI Framework.
